Salmon Burgers:

1 lb chopped salmon fillet (1/4-inch pieces)

1/4 cup breadcrumbs

1/4 cup chopped cilantro

1/4 cup mayonnaise

2 tbsp fresh lemon juice

1 tsp Dijon mustard

Avocado Salsa:

1 large, chopped avocado

1/3 cup chopped red onion

1 juiced lime

1/4 cup chopped cilantro

1 tbsp extra virgin olive oil

Burger buns (sesame)
INSTRUCTIONS
Salmon Burgers:

Place the chopped salmon fillet in a medium, mixture bowl and stir in the rest of the ingredients. Let the mixture rest for 5 minutes.

Heat a little olive oil in a large pan over medium heat. Divide the salmon mixture into 6 patties and fry them until they are browned on both sides and just cooked through (about 4 minutes on each side).
Avocado Salsa:

Combine all of the salsa ingredients together and mix well.

SERVING
Place a salmon burger patty on the bottom sesame bun. Then, scoop some of the avocado salsa and place on top. Finally, finish with the top sesame bun and serve!
